We make our pasta sauces by strictly following our families original recipes, the ones handed on by mums, grandmas, and mum’s grandmas, and that’s what makes the difference. This is why “our” Vestalia pasta sauces, although original, have gone through some small variations that make them even more tasty and one-of-a-kind. Ingredients, procedures and variations are secrets thoroughly described and jealously kept in our procedures manual, AKA “Vestalia Bible”.
The first step of our preparation is about setting the line. According to the recipe to make, we get all the ingredients organized, weighed carefully (according to the procedure’s indications) and all greens and vegetables are thoroughly washed and rinsed with tap water. Although cutting the ingredients is a simple task, it is done with great care and accuracy, due to the huge amount of ingredients we use for our recipes.
Our pasta sauces are made according to the traditions. Procedures and cooking times still are a secret kept in the Vestalia procedure. What we can actually reveal is that every second of the whole preparation is important; making even a little mistake can ruin the whole recipe or its taste. That’s why we check this step really carefully but in the exact same way we would do it at home: on a cooking stove and a big pot.
This is the last step of our preparation and by any chance it actually is what makes the difference. We are the only ones to have that kind of procedure to preserve our pasta sauces and that’s the reason why all the details of this last step are kept in the “Vestalia Bible”. What we can say is that, for this step too, time is everything and to respect that allows us to bring to your dining tables pasta sauces that smell and taste right as the ones just cooked at home.
